Baked Blueberry & Peach Oatmeal

Ingredients

  • 3 C old-fashioned oats
  • 1/2 C packed brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 egg whites
  • 1 egg
  • 1 1/4 C fat-free milk
  • 1/4 C of The Olive Bin's Manzanillo EVOO
  • 1 tsp vanilla extract
  • 1/2 T of The Olive Bin's Blueberry Balsamic Vinegar
  • 1/2 T of The Olive Bin's Peach Balsamic Vinegar
  • 2 C sliced peaches
  • 1 C fresh or frozen blueberries
  • 1/3 C chopped walnuts

Directions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine the oats, brown sugar, baking powder, and salt. Whisk the egg whites, egg, milk, oil, vanilla, and balsamic vinegars. Add to dry ingredients and stir until blended. Let stand for 5 minutes. Stir in peaches and blueberries.
  3. Transfer to an 11"x17" baking dish coated with cooking spray. Sprinkle with walnuts.
  4. Bake, uncovered, for 35 to 40 minutes, or until top is lightly browned and a thermometer reads 160 degrees. Serve with additional milk, if desired.
