Spiced Waffles with Sautéed Pears

Adapted from allyou.com recipe


  • 3 T + 2 T (more or less as needed) of The Olive Bin's Butter Olive Oil
  • 1 C all-purpose flour
  • 2 T + 2 T packed dark brown sugar
  • 1 tsp baking powder
  • 1/2 tsp + 1/4 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 3/4 C milk
  • 1 large egg
  • 4 firm-ripe pears (about 2 lb), peeled, cored, and cut into 1/2" wedges
  • 1 tsp lemon juice
  • 2 tsp of The Olive Bin's Cinnamon Pear Balsamic Vinegar


  1. In a medium bowl, mix flour, 2 T brown sugar, baking powder, 1/2 tsp cinnamon, allspice, ginger, nutmeg, cloves, and salt. In smaller bowl, whisk milk and egg. Add milk mixture and 3 T Butter olive oil to flour mixture; stir until well-blended.
  2. Preheat oven to 200 degrees F. Warm a 6" nonstick waffle iron; brush with 1/2 T to 1 T Butter olive oil. Spoon in 1/2 C batter; spread evenly over waffle iron. Cook until golden brown and firm, 2 to 3 minutes. Transfer waffles to a plate and keep warm in oven. Re-brush waffle iron with Butter olive oil; cook remaining waffles.
  3. Warm remaining 1 T Butter olive oil in a skillet over medium-low heat. Add pears and sprinkle with remaining 2 T brown sugar, 1/4 tsp cinnamon, lemon juice, and balsamic vinegar. Cook, stirring gently, until juices are caramelized and pears are tender, 4 to 5 minutes.
  4. Transfer waffles to 4 serving plates and top with pears. Serve immediately.
