Apple Pasta Salad with Lime Vinaigrette

This delicious and healthy pasta salad is also great when made with peaches (instead of apples) and Peach balsamic vinegar.

Ingredients

  • FOR THE PASTA:
  • 8 oz farfalle pasta, cooked according to package instructions, drained
  • 1 C roasted chicken, shredded
  • 1 medium zucchini, thinly sliced
  • 2 small yellow squash, thinly sliced
  • 2 apples, coarsely chopped
  • 1/3 C flat leaf parsley, chopped
  • 1/4 C walnuts, toasted
  • 1/4 C gorgonzola cheese
  • FOR THE DRESSING:
  • 1/4 C of The Olive Bin's Green Apple Balsamic Vinegar
  • 1/4 C of The Olive Bin's Lime Olive Oil
  • 1 T Dijon mustard
  • 1 clove garlic, minced

Directions

  1. Combine all pasta ingredients in large bowl.
  2. Whisk together all dressing ingredients. Pour over pasta salad; toss to coat. Enjoy!
