The perfect addition to breakfast or morning or afternoon snack!

Ingredients

  • 2 C old-fashioned rolled oats
  • 1 C sweetened, shredded coconut
  • 1 C sliced almonds
  • 3/4 C dried cranberries
  • ¼ C The Olive Bin's Blood Orange Olive Oil (Fused)
  • 1/4 C good honey
  • 1 tsp cinnamon
  • OPTIONAL: cashews, walnuts, pecans, dried fruits, dark chocolate chips, or any other dry granola ingredients of your choice

Directions

  1. Preheat oven to 325 degrees. Toss the oats, coconut, almonds and cranberries together in a bowl. Pour olive oil and honey over the oat mixture. Add the cinnamon and stir with a wooden spoon until well-coated.
  2. Spread onto a rimmed cookie sheet and bake for approximately 20 min, stirring frequently (2 or 3 times) until the mixture turns a nice, even golden brown. Adjust baking time to fit your oven's heat (watch carefully because it can brown quickly). Remove from oven and allow to cool, stirring occasionally.
  3. Store cooled granola in an air-tight container. Try over ice cream or yogurt.

“Delicious! The Cranberry Blood-Orange oil lends itself to many flavor combinations. I've made this with real maple syrup instead of honey, and it was a fun change up. We sprinkle this on yogurt, ice cream, pudding, salads, fruit, or by itself. This is a tasty way to use the big can of oatmeal in our pantry! Thank you for sharing.”
