Zucchini & Squash Sauté Bake




  • 2 medium zucchini
  • 2 medium yellow squash
  • 2 T of The Olive Bin’s Garlic Olive Oil
  • 2 T of The Olive Bin’s Butter Olive Oil
  • 2 T of The Olive Bin’s Tuscan Herb Olive Oil
  • Sea salt, to taste
  • Course ground pepper, to taste
  • ½ C Parmesan/Romano cheese
  • ¼ C Italian bread crumbs


  1. Cut zucchini & squash into ¼" slices.
  2. Salt & pepper to taste, then sauté in oils over medium heat until vegetables are medium soft and starting to brown.
  3. Drain off oil (the broiling step is too hot for them). Preheat broiler.
  4. Spray casserole dish with a non-stick cooking spray. Transfer the zucchini and squash to the pan.
  5. Combine; sprinkle cheese and bread crumbs over the top of the zucchini and squash. Broil until the cheese/bread crumb mixture browns. Serve immediately.
