Three-Cheese Peach & Prosciutto Pizza (with Honey Balsamic Reduction)

  • 1 (16 oz) pizza dough, homemade or store bought
  • 1 T of The Olive Bin's Basil Olive Oil
  • 1 clove garlic, finely minced
  • Salt and fresh ground black pepper, to taste
  • 3 oz prosciutto
  • 4 oz (1/2 C) ricotta cheese
  • 5 oz fresh mozzarella, diced into small cubes
  • 2 oz (1/2 C) asiago cheese, shredded
  • 1 1/2 medium fresh peaches
  • 1 C of The Olive Bin's Serrano Honey Vinegar
  • 2 T honey
  • Flour, for dusting
  • 1/3 C slightly packed fresh basil leaves, chopped


  1. Place pizza stone in oven and preheat oven to 450 degrees F. Let pizza stone preheat with oven; once oven is preheated, leave stone in oven an additional 30 minutes. (This allows the stone to heat thoroughly for optimal cooking.)
  2. Meanwhile, pour balsamic vinegar and honey into a deep skillet. Set skillet over medium heat, allow mixture to cook and simmer, until reduced to slightly under a 1/2 cup (about 15 minutes). Stir mixture occasionally during first 5 minutes, then stir constantly during last 10 minutes.
  3. Lightly dust a sheet of parchment paper, about 14" long, with flour. Stretch and shape dough into a 12 1/2" round. In a small bowl, stir together olive oil and garlic. Brush mixture evenly over top of crust, making sure garlic is evenly distributed. Season crust lightly with salt and pepper. Layer prosciutto over crust evenly, aligning pieces side by side. Dollop small portions of ricotta over pizza, then sprinkle with mozzarella cubes and asiago.
  4. On cutting board, cut peaches in half and core. Laying peaches sliced side down, cut peaches into slices approximately 1/4" thick. Layer peaches evenly over pizza. Using a pizza peel, transfer pizza from parchment to preheated pizza stone in oven. Bake 9 to 11 minutes, or until edges are lightly golden.
  5. Remove from oven, sprinkle with fresh basil, and drizzle with honey balsamic reduction. (Leftover reduction can be stored in airtight container in fridge up to one week.) Cut pizza into slices and serve warm.
