Seasonal Flavors

We’ve recently set out 5 new, seasonal flavors: Grapefruit Balsamic, Apricot Balsamic, Wild Dill Olive Oil, Cilantro and Roasted Onion Olive Oil, and Limonato Olive Oil. Below is information on their flavor, pairing ideas, and how to use them.

Grapefruit White Balsamic Vinegar

Flavor: Sparkles with a crisp, clean citrus flavor.  A perfect balance of acidity and natural sweetness.  

Oil Pairings: Milanese Gremolata, Harissa, Lime, Herbs de Provence

Ideas:

  • Combine with Basil olive oil and use as a marinade for chicken or fish
  • Mix with Herbs de Provence olive oil and drizzle over fresh grapefruit or tangerine
  • Combine with extra virgin olive oil and drizzle over greens with shrimp, avocado, and feta cheese
  • Flavor a bottled or sparkling water
  • Use as a dressing, paired with fennel.  Makes a show-stopping white balsamic grapefruit granita dessert!

Apricot White Balsamic Vinegar

Flavor: Both sweet and tart, fresh ripe apricot 

Oil Pairings: Basil, Blood Orange, Tuscan Herb

Ideas:

  • Reduce down to use as a glaze for meat
  • Drizzle over fine cheese and serve with bread or crackers
  • Marinade chicken in this balsamic before grilling
  • Add to apricot or other fruit preserves for a flavor twist!

Wild Dill Infused Olive Oil

Flavor: Vibrant must-have Mediterranean culinary flavor of Wild Fernleaf Dill

Vinegar Pairings: Sicilian Lemon, Traditional, Pomegranate, Champagne Wine Vinegar

Ideas:

  • Use it in aioli or olive oil based mayonnaise
  • Make tartar sauce with it
  • Making delectable herb breads and rolls

Cilantro and Roasted Onion

Flavor: Roasted onion with a hint of cilantro

Vinegar Pairings: Blackberry Ginger, Peach, Pomegranate, Traditional, Pineapple

Ideas:

  • Use with Traditional to marinate chicken
  • Use to roast any vegetables
  • Add to corn and black bean salsa
  • Brush on bread for a savory grilled cheese sandwich

Eureka Green Lemon (Limonato) Olive Oil

(Fused with Whole Fruit)

Flavor: Combines olive oil with the young green Eureka Lemons picked at the precise moment 

Pairings: Black Cherry, Fig, Pomegranate, Cranberry Pear, Neapolitan Herb

Ideas:

  • Combine with Peach balsamic to marinate seafood
  • Combine with any balsamic for a salad or to grill fruit
  • Use in place of butter or other oils in baking
